1/2 cup flour
1 tsp salt
1/2 tsp cayenne pepper
1/4 cup butter
4 chicken breasts (you could use chicken tenders too! I used about 3 of the frozen chicken breasts from Costco cut up)
Preheat oven to 350. Mix flour, salt and cayenne pepper together in a large ziploc bag. Drop chicken in bag and shake to coat. Melt butter and place in a 9 x 13 baking dish. Place flour coated chicken in baking dish and turn to coat both sides with butter. Bake uncovered for 30 minutes.
Honey Glaze Sauce
1/4 cup brown sugar
1/4 cup honey
1/4 cup lemon juice
1 Tbsp soy sauce
1 tsp curry powder
1/4 cup butter, melted
Combine all ingredients. Pour over chicken until well coated. Bake for an additional 45 minutes. Serve over rice. (Keep your eye on it, mine started to burn a little bit).
Fae's Chocolate-Marshmallow Cookies
1/2 cup shortening
1 cup sugar
1 egg
1/2 cup milk
1 tsp vanilla
2 cups flour
1/2 cup cocoa
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
mini-marshmallows
Preheat oven to 350. Cream shortening and sugar; add egg, milk, and vanilla. Stir in flour, cocoa, soda, baking powder, and salt. Bake for 10 minutes then remove from oven and top each with 2-3 marshmallows (I cute my marshmallows in half and put about 10 on). Return to oven for 1 minute. While warm, top with chocolate frosting.
Chocolate Frosting
1 square unsweetened chocolate
1/4 cup margarine
1/4 cup milk
3 cups powdered sugar
1 tsp vanilla
Melt chocolate, then add margarine and milk. Bring to a boil. Stir while boiling for 1 minute. Sift in powdered sugar, add vanilla. Stir well.

ReplyDeleteRachel, I don't know if you know me, I'm one of Sara's friends from high school. Anyway, I just had to say I am so jealous of your trip to S. Utah--it looks so beautiful and clear, what fun! I will definitely be trying this chicken too, meat is so much easier to get my kids to eat if it has sweet stuff on it. :)
